The food and beverage management team orchestrates the magic of the guest dining experience by leading a team of passionate individuals. Our goal is to create an ambience where our guests feel at home, and we always have something up our sleeve to impress. At Virgin Hotels nothing is ever "usual" so the Breakfast Manager not only has to be willing to roll up their sleeves and get things done, but have to be willing to have fun.
The Nitty-Gritty:
What exactly you will be doing
- You will be responsible for overseeing the breakfast and daytime restaurant operation, delivering 5 service 7 days a week to hotel residents and non-residents.
- You will ensure standards are consistently adhered to and work with the wider management team to help continually elevate our breakfast offering.
- You are responsible for detailing and confirming guest profiles and communicating that to FOH and BOH. You will handle guest issues directly, with confidence, and achieve positive results.
- Communicate to the kitchen, other outlets, and front desk about food issues, VIPs, reservations, and changes in business levels.
- Communicate to teammates: same as above, guest expectations, changes in food or drink menus, special events/programming. This will be achieved by a per shift team meeting as well as a post-shift recap.
- Handle daily tasks of team allocations, shift briefings, ensuring people are in the right place at the right time, driving revenue, and completing all mandatory and compliance-related tasks.
- Training of teammates: develop a training plan and assist in the delivery of the departmental training plan to ensure all team members can perform their duties to the best of their abilities.
- Targets: Develop a plan to achieve departmental targets and involve the whole team by encouraging them to drive extra revenue through incentive schemes.
- Stock ordering: Ensure the correct equipment is in place for service at all times.
- Other responsibilities: The main priority is the guest experience, monitoring the floor, training, and consistent leadership. However, there is still work to be done. The Breakfast Manager must ensure staffing is monitored in accordance with business levels. Inventory controls, P&L knowledge, waste of product, china, glass, equipment, etc. must be monitored daily. All human resource aspects must be completed according to protocol.
- While this role will involve primarily early morning starts, there may be a requirement for some evening shifts occasionally.
Background must-have:
- Current right to work in the UK.
- Preferred: 1-2 years' management experience in a high-end hotel breakfast setting.
- Proficient computer knowledge.
- WSET Level 2, 3, or 4 (Preferred).
